- 1/2 cup milk
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons butter, melted
- 1 cup cheese (like soft white cheese)
Instructions
- In a blender, combine fresh corn, milk, sugar, and salt. Blend until smooth.
- Add flour and baking powder to the mixture, blend until combined.
- Heat a non-stick skillet over medium heat and melt some butter.
- Pour a ladle of batter onto the skillet and cook until bubbles form on the surface, about 3-4 minutes.
- Flip and cook the other side until golden brown, about 2-3 minutes.
- Serve warm with cheese on top or on the side.
Notes
- For a sweeter flavor, add more sugar as preferred.
- Make sure to use fresh corn for the best taste.
- Can be served with a variety of toppings like sour cream or avocado.
