Description

A hearty and delicious Vegetarian Pumpkin Chili that is perfect for any season.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 cup corn, frozen or canned
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and bell pepper, and sauté until soft.
  3. Stir in chili powder, cumin, and smoked paprika, cooking for another minute.
  4. Add pumpkin puree, black beans, diced tomatoes, vegetable broth, corn, salt, and black pepper.
  5. Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
  6. Serve hot and enjoy!
