Description

A flavorful and hearty dish combining potatoes, parsnips, and horseradish with a crunchy breadcrumb topping.


Ingredients

Scale
  • 1 pound potatoes
  • 1 pound parsnips
  • 1/2 cup horseradish
  • 1 cup breadcrumbs
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Peel and chop the potatoes and parsnips.
  2. Boil them together in salted water until tender.
  3. Drain and mash the potatoes and parsnips together.
  4. Stir in horseradish, butter, salt, and pepper.
  5. Spread the mixture into a baking dish.
  6. Top with breadcrumbs.
  7. Bake at 375°F for 20 minutes or until golden brown.

Notes

  • For extra flavor, add garlic powder to the mash.
  • Can be made ahead of time and baked just before serving.
