This creamy and smoky mac and cheese is perfect for any occasion.


Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 4 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup breadcrumbs


Instructions

  1. Preheat your Traeger to 225°F.
  2. Cook the macaroni according to package instructions; drain and set aside.
  3. In a large cast-iron skillet, melt the butter over medium heat.
  4. Whisk in the flour and cook for 1-2 minutes.
  5. Gradually add the milk, stirring constantly until thickened.
  6. Stir in the cheeses and seasonings until melted and smooth.
  7. Add the cooked macaroni to the cheese sauce and mix well.
  8. Top with breadcrumbs and place the skillet on the Traeger.
  9. Smoke for 1 hour until bubbly and golden brown.
