Description

Torta Pasqualina is a traditional Italian savory pie filled with greens and ricotta, often enjoyed during Easter celebrations.


Ingredients

  • 2 cups flour
  • 1/2 cup olive oil
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 4 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the pastry dough by mixing the flour, olive oil, and water until smooth. Allow it to rest.
  3. Blanch the spinach and mix it with ricotta, Parmesan, and seasonings.
  4. Roll out half of the dough and fit it into a pie dish.
  5. Spread the filling on the dough and create small wells for the eggs.
  6. Crack the eggs into the wells and cover with the remaining dough.
  7. Bake for 40-45 minutes until golden brown.
