- 1/2 cup olive oil
- 2 cups spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 4 eggs

- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the pastry dough by mixing the flour, olive oil, and water until smooth. Allow it to rest.
- Blanch the spinach and mix it with ricotta, Parmesan, and seasonings.
- Roll out half of the dough and fit it into a pie dish.
- Spread the filling on the dough and create small wells for the eggs.
- Crack the eggs into the wells and cover with the remaining dough.
- Bake for 40-45 minutes until golden brown.
