Description

A refreshing Middle Eastern salad featuring parsley, bulgur, tomatoes, and mint.


Ingredients

  • 1 cup bulgur wheat
  • 4 cups finely chopped parsley
  • 1 cup diced tomatoes
  • 1/2 cup finely chopped mint
  • 1/4 cup chopped green onions
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • Salt to taste


Instructions

  1. Rinse bulgur wheat under cold water and soak in water for 30 minutes. Drain and squeeze out excess water.
  2. In a large bowl, combine bulgur, parsley, tomatoes, mint, and green onions.
  3. In a separate bowl, whisk together lemon juice, olive oil, and salt.
  4. Pour dressing over the salad and mix well.
  5. Chill for at least 30 minutes before serving.
