- 4 large onions
- 1 cup rice
- 1/4 cup pine nuts
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups vegetable broth
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 cup chopped parsley
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the tops off the onions and hollow them out, reserving the onion flesh.
- In a pan, cook the rice in vegetable broth until fluffy.
- Add the reserved onion flesh, pine nuts, salt, pepper, cinnamon, cumin, and parsley to the rice and mix well.
- Stuff the hollowed-out onions with the rice mixture.
- Drizzle olive oil over the stuffed onions.
- Place the onions in a baking dish and cover with foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden.

- Make sure to adjust the cooking time based on the size of the onions.
