- 1 cup chopped dates
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the chopped dates and baking soda. Pour boiling water over them and let it sit for 10 minutes.
- In another bowl, cream the butter and brown sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Incorporate the date mixture into the wet ingredients.
- In a separate bowl, mix the flour, baking powder, and salt. Gradually fold this into the wet mixture until just combined.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Serve warm with toffee sauce.
Notes
- For extra richness, serve with whipped cream or vanilla ice cream.
- Store leftovers in an airtight container for up to 3 days.
