Description

A comforting and wholesome Spinach Tortellini Soup that’s quick and easy to prepare!


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package (9 oz) fresh tortellini
  • 4 cups baby spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, sauté until the onion is translucent.
  3. Pour in the vegetable broth and add the diced tomatoes.
  4. Bring the mixture to a boil, then stir in the tortellini and Italian seasoning.
  5. Cook for 5-7 minutes until the tortellini are tender.
  6. Add the baby spinach and cook until wilted, about 2 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.
