Ingredients

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) fresh tortellini
- 4 cups baby spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and garlic, sauté until the onion is translucent.
- Pour in the vegetable broth and add the diced tomatoes.
- Bring the mixture to a boil, then stir in the tortellini and Italian seasoning.
- Cook for 5-7 minutes until the tortellini are tender.
- Add the baby spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- This soup is great for meal prep and can be stored in the fridge for up to 3 days.
- Feel free to add other vegetables like carrots or zucchini.
- For a heartier version, add cannellini beans.
