Ingredients

- 2 cups chicken broth
- 1 cup water
- 1 carrot, diced
- 1 potato, diced
- 1 celery stalk, chopped
- 1 onion, chopped
- 1 clove garlic, minced
- 1 teaspoon thyme
- 1/2 teaspoon pepper
- 1 bay leaf
- 1 cup noodles or rice
Instructions
- In a large pot, combine chicken broth and water.
- Add the carrot, potato, celery, onion, garlic, thyme, pepper, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Add the noodles or rice and cook until tender.
- Remove the bay leaf before serving.
Notes
- This soup is great for colds and can be made with leftover chicken.
- Add spinach or other greens for extra nutrients.
