Description

A comforting soup that helps to soothe and nourish when you’re feeling under the weather.


Ingredients

Scale
  • 2 cups chicken broth
  • 1 cup water
  • 1 carrot, diced
  • 1 potato, diced
  • 1 celery stalk, chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1 bay leaf
  • 1 cup noodles or rice


Instructions

  1. In a large pot, combine chicken broth and water.
  2. Add the carrot, potato, celery, onion, garlic, thyme, pepper, and bay leaf.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Add the noodles or rice and cook until tender.
  5. Remove the bay leaf before serving.

Notes

  • This soup is great for colds and can be made with leftover chicken.
  • Add spinach or other greens for extra nutrients.
