- 2 pounds beef chuck roast
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup minced garlic
- 1/4 cup minced ginger
- 4 cups beef broth
- 2 cups rice
- 5 cups fresh spinach
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 3 green onions chopped
Instructions
- Place the beef chuck roast in the slow cooker.
- In a bowl, mix soy sauce, brown sugar, garlic, and ginger; pour over the beef.
- Add beef broth and cook on low for 6-8 hours or until beef is tender.
- Remove beef, shred it, and return it to the slow cooker.
- Add rice and cook for an additional 30 minutes.
- Stir in the fresh spinach and let it wilt before serving.
- Drizzle with sesame oil and sprinkle with chopped green onions.
