Description

A delicious and easy slow cooker recipe featuring tender beef, nutritious spinach, and flavorful rice.


Ingredients

  • 2 pounds beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup minced garlic
  • 1/4 cup minced ginger
  • 4 cups beef broth
  • 2 cups rice
  • 5 cups fresh spinach
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 3 green onions chopped


Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. In a bowl, mix soy sauce, brown sugar, garlic, and ginger; pour over the beef.
  3. Add beef broth and cook on low for 6-8 hours or until beef is tender.
  4. Remove beef, shred it, and return it to the slow cooker.
  5. Add rice and cook for an additional 30 minutes.
  6. Stir in the fresh spinach and let it wilt before serving.
  7. Drizzle with sesame oil and sprinkle with chopped green onions.
