Description

This Slow Cooker Cowboy Casserole is a hearty and comforting dish made with ground beef, beans, and lots of cheese.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. In a skillet, brown the ground beef and onions over medium heat until cooked through; drain excess fat.
  2. Add the browned beef, beans, corn, diced tomatoes, garlic powder, chili powder, cumin, salt, and pepper to the slow cooker.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. In the last 30 minutes of cooking, add the cheddar cheese on top, cover, and let it melt.
  6. Serve warm and enjoy!
