This Slow Cooker Cowboy Casserole is a hearty and comforting dish made with ground beef, beans, and lots of cheese.

- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef and onions over medium heat until cooked through; drain excess fat.
- Add the browned beef, beans, corn, diced tomatoes, garlic powder, chili powder, cumin, salt, and pepper to the slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes of cooking, add the cheddar cheese on top, cover, and let it melt.
- Serve warm and enjoy!

- Feel free to add additional vegetables like bell peppers or zucchini for extra nutrition.
