Description

A tender and flavorful corned beef brisket cooked slowly in a crockpot with spices and veggies.


Ingredients

  • 3 to 4 pounds corned beef brisket
  • 4 cups water
  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 1 teaspoon crushed red pepper flakes
  • 4 garlic cloves, minced
  • 1 medium onion, quartered
  • 4 carrots, peeled and cut into chunks
  • 3 potatoes, cut into quarters


Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. In a bowl, mix the water and spices, then pour over the brisket.
  3. Add the vegetables around the brisket.
  4. Cover and cook on low for 8 to 10 hours or until tender.
  5. Remove the brisket, slice it against the grain, and serve with vegetables.

Notes

  • For added flavor, you can include cabbage during the last hour of cooking.
  • Serve with mustard or your favorite sauce.
