- 1/4 cup fresh lemon juice

- 1 teaspoon dried oregano

- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cut the potatoes into wedges.
- In a large bowl, mix together olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
- Add the potato wedges to the bowl and toss until they are well coated.
- Pour the vegetable broth into a baking dish and arrange the potatoes on top.
- Bake in the preheated oven for 45-55 minutes, turning occasionally until crispy and golden.
- Garnish with chopped parsley before serving.
