Description

These simple crispy Greek lemon potatoes are a perfect side dish with a golden crust and zesty flavor.


Ingredients

  • 2 pounds potatoes
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable broth
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the potatoes into wedges.
  3. In a large bowl, mix together olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  4. Add the potato wedges to the bowl and toss until they are well coated.
  5. Pour the vegetable broth into a baking dish and arrange the potatoes on top.
