A comforting and flavorful Vietnamese noodle soup made with tender rotisserie chicken and aromatic spices.

- 1 rotisserie chicken, shredded
- 8 cups chicken broth
- 2 star anise
- 1 cinnamon stick
- 4 whole cloves
- 1 onion, halved
- 1 piece ginger, sliced
- 1 tablespoon fish sauce
- 200 grams rice noodles
- 1 lime, cut into wedges
- 2 cups bean sprouts
- 1 cup fresh basil
- 1 cup cilantro
- 1 jalapeno, sliced
Instructions
- In a large pot, combine chicken broth, star anise, cinnamon stick, cloves, onion, ginger, and fish sauce. Bring to a simmer.
- Add shredded rotisserie chicken and simmer for at least 20 minutes.
- Meanwhile, cook rice noodles according to package instructions and set aside.
- Remove spices and aromatics from the broth.
- To serve, divide noodles into bowls, ladle broth and chicken over the noodles, and top with bean sprouts, basil, cilantro, jalapeno, and lime wedges.
Notes
- For a richer flavor, simmer the broth longer with additional spices.
- Feel free to customize toppings to your preference.
- This recipe can be made with homemade chicken broth for enhanced taste.
