Description

Delicious and easy to make, these peanut butter cookie cups are perfect for a small batch treat.


Ingredients

Scale
  • 1/4 cup creamy peanut butter
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix peanut butter, butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg yolk and vanilla extract, and mix well.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in chocolate chips.
  7. Drop spoonfuls of the dough into a greased muffin tin.
  8. Bake for about 10-12 minutes, or until lightly golden.
  9. Let cool before removing from the tin.

Notes

  • Make sure to not overbake for softer cookie cups.
  • Customize by adding nuts or different types of chocolate.
