- 2 cups fresh peaches, peeled and diced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 package refrigerated pie crusts
- 1 egg, beaten (for egg wash)
- 1 tablespoon sugar (for sprinkling)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine peaches, sugar, lemon juice, and cinnamon.
- Roll out the pie crust and cut into circles.
- Place a spoonful of the peach mixture on one half of each circle.
- Fold the other half over and seal the edges with a fork.
- Brush the tops with the beaten egg and sprinkle with sugar.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
Notes
- For an extra touch, serve with vanilla ice cream.
- Make sure the edges are sealed well to prevent filling from leaking out.
