Description

A delicious and easy overnight baked banana French toast casserole that’s perfect for brunch.


Ingredients

Scale
  • 1 loaf French bread, cut into cubes
  • 4 large ripe bananas, sliced
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Grease a 9×13 inch baking dish.
  2. Arrange half of the bread cubes in the baking dish and top with half of the sliced bananas.
  3. Repeat with remaining bread cubes and bananas.
  4. In a bowl, whisk together eggs, milk, brown sugar, vanilla, cinnamon, and salt.
  5. Pour the egg mixture over the bread and bananas.
  6. Cover and refrigerate overnight.
  7. Preheat oven to 350°F (175°C).
  8. Bake uncovered for 45-50 minutes or until golden brown and set.
  9. Let cool slightly before serving.

Notes

  • For a richer flavor, add a sprinkle of nutmeg.
  • Can be prepared a day in advance.
