Description

Deliciously moist and chewy oatmeal chocolate chip muffins that are perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine oats and milk and let sit for 10 minutes.
  3. Add brown sugar, vegetable oil, egg, and vanilla to the bowl and mix well.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in chocolate chips.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
