A delightful dessert that combines the flavors of mint and chocolate in a soft cake roll.

- 4 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/3 cup cocoa powder
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a mixing bowl, beat the eggs and granulated sugar until thick and lemon-colored.
- Add the vanilla and peppermint extracts and mix until combined.
- In a separate bowl, whisk together the flour, salt, and cocoa powder.
- Gradually fold the dry ingredients into the egg mixture until just combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- While baking, prepare a clean kitchen towel dusted with powdered sugar.
- Once baked, immediately invert the cake onto the towel and carefully remove the parchment paper.
- Roll the cake up in the towel and let it cool completely.
- For the filling, whip the heavy cream and powdered sugar until stiff peaks form, and fold in the chocolate chips.
- Unroll the cooled cake, spread the filling over it, and roll it back up carefully.
- Chill in the refrigerator for at least an hour before slicing and serving.
Notes
- This cake roll can be made a day in advance.
- Store leftovers in an airtight container in the refrigerator.
