Ingredients

  • 1 pound minced beef
  • 4 large potatoes, peeled and diced
  • 2 cups beef stock
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup frozen peas
  • 2 tablespoons butter


Instructions

  1. In a large skillet, brown the minced beef over medium heat. Drain any excess fat.
  2. Add the onion and garlic, and cook until soft.
  3. Stir in the tomato paste, Worcestershire sauce, and thyme, cooking for another minute.
  4. Add the beef stock, diced potatoes, salt, and pepper. Bring to a boil.
  5. Reduce the heat, cover, and simmer for 20-25 minutes, or until the potatoes are fork-tender.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. Remove from heat and stir in the butter before serving.

Notes

  • For added flavor, consider adding some diced carrots or celery.
