- 1 pound minced beef
- 4 large potatoes, peeled and diced
- 2 cups beef stock
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup frozen peas
- 2 tablespoons butter
Instructions
- In a large skillet, brown the minced beef over medium heat. Drain any excess fat.
- Add the onion and garlic, and cook until soft.
- Stir in the tomato paste, Worcestershire sauce, and thyme, cooking for another minute.
- Add the beef stock, diced potatoes, salt, and pepper. Bring to a boil.
- Reduce the heat, cover, and simmer for 20-25 minutes, or until the potatoes are fork-tender.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Remove from heat and stir in the butter before serving.
Notes
- For added flavor, consider adding some diced carrots or celery.
- This dish tastes even better the next day.
