Description

Delicious and buttery Mexican Wedding Cookies, also known as Polvorones, are a traditional treat perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup confectioners’ sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped nuts (walnuts or pecans)
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Stir in the vanilla.
  4. Combine flour, nuts, and salt; gradually stir into the creamed mixture.
  5. Shape dough into small balls and place them on ungreased cookie sheets.
  6. Bake for 15-20 minutes in the preheated oven. Cookies should be set but not brown.
  7. Remove from oven and let cool slightly before rolling in confectioners’ sugar.
  8. Allow to cool completely on wire racks and dust with more sugar if desired.

Notes

  • For a more intense flavor, toasted nuts can be used.
