Delicious and buttery Mexican Wedding Cookies, also known as Polvorones, are a traditional treat perfect for any occasion.

- 1 cup unsalted butter, softened
- 1/2 cup confectioners’ sugar, plus more for dusting
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup finely chopped nuts (walnuts or pecans)
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until smooth.
- Stir in the vanilla.
- Combine flour, nuts, and salt; gradually stir into the creamed mixture.
- Shape dough into small balls and place them on ungreased cookie sheets.
- Bake for 15-20 minutes in the preheated oven. Cookies should be set but not brown.
- Remove from oven and let cool slightly before rolling in confectioners’ sugar.
- Allow to cool completely on wire racks and dust with more sugar if desired.
Notes
- For a more intense flavor, toasted nuts can be used.
- These cookies can be stored in an airtight container for up to a week.
