Description

These Mexican-Style Street Potatoes are a delicious twist on traditional street food, bringing flavors of Mexico right to your table.


Ingredients

  • 2 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss potatoes with olive oil, chili powder, cumin, paprika, garlic powder, and salt.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes or until golden and crispy, stirring halfway through.
  6. Remove from the oven and sprinkle with cotija cheese and fresh cilantro.
  7. Serve with lime wedges on the side.
