- 2 pounds boneless skinless chicken breasts
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and cook for an additional minute.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper.
- Add chicken breasts and pour in chicken broth.
- Bring to a boil, then reduce heat and cover. Simmer for 20-25 minutes or until chicken is cooked through.
- Remove chicken from skillet and shred with two forks.
- Return shredded chicken to skillet and mix with sauce. Stir in chopped cilantro.
- Serve warm in tacos, burritos, or over rice.
