Description

A hearty and flavorful casserole combining cornbread with Mexican-style ingredients.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 cup salsa
  • 1 package cornbread mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1 onion, diced
  • 2 eggs
  • 1/4 cup milk


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, cook the ground beef, onion, and bell pepper until browned.
  3. Stir in black beans, corn, and salsa, then remove from heat.
  4. In a bowl, mix cornbread mix, eggs, and milk until combined.
  5. In a baking dish, layer the beef mixture and cornbread batter.
  6. Bake for 25-30 minutes until cornbread is golden brown.
  7. Sprinkle shredded cheese on top and return to the oven for 5 minutes to melt.
  8. Let cool for a few minutes before serving.

Notes

  • Great for leftovers!
  • Can be made vegetarian by omitting the ground beef.
