A hearty and flavorful casserole combining cornbread with Mexican-style ingredients.

- 1 pound ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 cup salsa
- 1 package cornbread mix
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell pepper
- 1 onion, diced
- 2 eggs
- 1/4 cup milk
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, cook the ground beef, onion, and bell pepper until browned.
- Stir in black beans, corn, and salsa, then remove from heat.
- In a bowl, mix cornbread mix, eggs, and milk until combined.
- In a baking dish, layer the beef mixture and cornbread batter.
- Bake for 25-30 minutes until cornbread is golden brown.
- Sprinkle shredded cheese on top and return to the oven for 5 minutes to melt.
- Let cool for a few minutes before serving.
Notes
- Great for leftovers!
- Can be made vegetarian by omitting the ground beef.
