Description

This dish combines tender chicken marinated in a rich blend of spices, baked to perfection, served with a flavorful cauliflower rice.


Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 head of cauliflower, grated
  • 2 carrots, grated
  • 1 bell pepper, chopped
  • 2 green onions, sliced
  • 1 teaspoon sesame oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix soy sauce, curry powder, paprika, garlic, onion, and olive oil. Add chicken thighs and marinate for at least 30 minutes.
  3. Place marinated chicken in a baking dish and bake for 30-40 minutes until cooked through.
  4. While the chicken is baking, heat sesame oil in a pan over medium heat. Add grated cauliflower, carrots, and bell pepper. Sauté for 5-7 minutes.
  5. Serve the baked chicken on a bed of cauliflower rice and garnish with green onions.
