- 3 ripe bananas
- 1/4 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, mash the bananas.
- Add the applesauce, honey (or maple syrup), and vanilla extract. Mix well.
- In another bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped nuts if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing and serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a sweeter bread, consider adding a few more tablespoons of honey or a sugar substitute.
