Description

This Low-Carb Spicy Brazilian Coconut Chicken recipe is a flavorful, healthy dish that is perfect for any occasion.


Ingredients

  • 2 pounds chicken thighs
  • 1 can coconut milk
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 1 lime, juiced


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together coconut milk, olive oil, garlic, ginger, chili powder, cumin, paprika, and salt.
  3. Add the chicken thighs to the marinade and let sit for at least 30 minutes.
  4. Place the marinated chicken in a baking dish, pour any remaining marinade over the top.
