- 2 pounds chicken thighs
- 1 can coconut milk
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1 lime, juiced
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together coconut milk, olive oil, garlic, ginger, chili powder, cumin, paprika, and salt.
- Add the chicken thighs to the marinade and let sit for at least 30 minutes.
- Place the marinated chicken in a baking dish, pour any remaining marinade over the top.
