Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon poppy seeds
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon butter (for cooking)


Instructions

  1. In a mixing bowl, whisk together eggs, almond flour, almond milk, poppy seeds, lemon juice, and lemon zest until smooth.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter.
  3. Pour a small amount of batter into the skillet, tilting to spread it evenly.
  4. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden.
  5. Flip and cook the other side for 1-2 minutes.
  6. Repeat with remaining batter and serve with your favorite toppings.
