Instructions
- Preheat the oven to 375°F (190°C).
- Slice the bell peppers in half and remove the seeds.
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add ground turkey or beef, cook until browned, and stir in taco seasoning.
- Add diced tomatoes and cottage cheese, mixing well.
- Stuff the pepper halves with the mixture and top with shredded cheese.
- Place peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until cheese is bubbly.
