Description

A delicious and satisfying loaded baked potato topped with tender steak bites, sour cream, cheese, and green onions.


Ingredients

  • 4 large russet potatoes
  • 1 pound steak (sirloin or ribeye)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced green onions
  • 1/4 cup cooked bacon bits


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the potatoes, then poke holes in them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake the potatoes in the preheated oven for 45-60 minutes until tender.
  5. While potatoes are baking, season the steak with salt and pepper.
  6. Heat a skillet over medium-high heat and add the steak, cooking to your desired doneness.
  7. Remove the potatoes from the oven and let them cool slightly.
  8. Cut the potatoes open and fluff the insides with a fork.
  9. Top each potato with steak bites, cheese, sour cream, green onions, and bacon bits.
