Description

This comforting Italian Penicillin Soup is a hearty blend of flavors that will warm you up on a cold day.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 pound chicken, shredded
  • 8 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups egg noodles
  • 1 cup frozen peas
  • 1/4 cup fresh parsley, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the carrots and celery, cooking for about 5 minutes.
  3. Stir in the shredded chicken, chicken broth, diced tomatoes, and Italian seasoning. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for about 20 minutes.
  5. Add the egg noodles and frozen peas, cooking until noodles are tender.
  6. Stir in the parsley just before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
