A hearty and comforting Italian Chicken Gnocchi Soup that is perfect for chilly days.
Ingredients

- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 pound gnocchi
- 2 cups fresh spinach
- 1/2 cup heavy cream
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the carrots, celery, onion, and garlic; sauté for about 5 minutes.
- Pour in the chicken broth and add Italian seasoning, bring to a boil.
- Add the gnocchi and cook until they float to the top.
- Stir in the spinach and heavy cream; cook for another 2 minutes.
- Season with salt and pepper before serving.
Notes
- For added richness, substitute some of the chicken broth with white wine.
- This soup can be made ahead of time and freezes well.
