These delicious oatmeal banana chocolate chip muffins are perfect for breakfast or a snack.

- 1 ½ cups rolled oats
- 1 cup mashed ripe bananas
- ½ cup brown sugar
- ½ cup chocolate chips
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- ⅓ cup melted butter
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix the mashed bananas and brown sugar.
- Add melted butter, eggs, and vanilla extract, and mix well.
- In a separate bowl, combine the rolled oats, baking powder, baking soda, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Fold in the chocolate chips.
- Spoon the batter into the prepared muffin tin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for 5 minutes before transferring to a wire rack.
Notes
- For added richness, you can substitute half of the melted butter with applesauce.
- These muffins freeze well; store them in an airtight container.
