These delicious mushroom and leek puff pastry bites are a perfect appetizer for any occasion.
Ingredients

- 1 sheet puff pastry
- 1 tablespoon olive oil
- 1 leek, sliced
- 8 ounces mushrooms, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and add the leeks. Sauté until soft, about 3-4 minutes.
- Add chopped mushrooms, garlic, thyme, salt, and pepper. Cook until mushrooms are tender and moisture has evaporated, about 5-7 minutes.
- Roll out the puff pastry on a floured surface. Cut into squares.
- Place a spoonful of the mushroom-leek mixture in the center of each square, fold the pastry over, and seal edges.
- Brush the tops with the beaten egg.
- Bake for 15-20 minutes or until golden brown.
Notes
- For a vegetarian option, omit any meat-based ingredients.
- These bites can be made ahead of time and frozen before baking.
