A delightful fall treat combining sweet pumpkin and maple flavors in soft whoopie pies.

- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup maple cream cheese frosting
Instructions
- Preheat the oven to 350°F (180°C).
- In a large bowl, mix pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- Gradually add the dry ingredients to the pumpkin mixture until just combined.
- Drop spoonfuls of the batter onto a lined baking sheet, spacing them apart.
- Bake for 15-18 minutes or until a toothpick comes out clean.
- Let cool completely before frosting one pie and sandwiching it with another.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- For best flavor, allow the frosted whoopie pies to sit for an hour before serving.
