- 1 medium butternut squash, peeled and diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 baguette, sliced
- 1/2 cup unsalted butter
- 1 tablespoon fresh sage, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- While the squash is roasting, melt the butter in a pan over medium heat. Add the chopped sage and cook until the butter turns golden brown and fragrant.
- Toast the baguette slices until golden.
- Top each slice with roasted butternut squash, drizzle with brown butter, and sprinkle with Parmesan and parsley.
Notes
- For extra flavor, add a pinch of cinnamon to the butternut squash before roasting.
- This recipe is perfect as an appetizer or a side dish.
