Description

A quick and easy recipe for a flavorful chicken, broccoli, and rice dish made in the Instant Pot.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup long-grain white rice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  3. Add the chicken to the pot and sauté for 5 minutes on each side until browned.
  4. Remove the chicken and set aside. Add the rice to the pot and stir to combine with the oil.
  5. Pour in the chicken broth and stir in the broccoli florets.
  6. Place the chicken on top of the rice and broccoli.
  7. Seal the Instant Pot and cook on high pressure for 8 minutes.
  8. Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  9. Fluff the rice with a fork and serve.

Notes

  • For added flavor, consider marinating the chicken beforehand.
  • This dish can be easily customized by adding other vegetables.
