A quick and easy recipe for a flavorful chicken, broccoli, and rice dish made in the Instant Pot.

- 1 pound boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 cup long-grain white rice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Add the chicken to the pot and sauté for 5 minutes on each side until browned.
- Remove the chicken and set aside. Add the rice to the pot and stir to combine with the oil.
- Pour in the chicken broth and stir in the broccoli florets.
- Place the chicken on top of the rice and broccoli.
- Seal the Instant Pot and cook on high pressure for 8 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Fluff the rice with a fork and serve.
Notes
- For added flavor, consider marinating the chicken beforehand.
- This dish can be easily customized by adding other vegetables.
