Description

A comforting and quick version of chicken and dumplings made in your Instant Pot.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups biscuit dough (store-bought or homemade)


Instructions

  1. Press the sauté button on the Instant Pot and add the chicken, broth, garlic powder, onion powder, salt, and pepper.
  2. Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
  3. Quick release the pressure and shred the chicken inside the pot.
  4. Add the frozen peas and carrots, then drop spoonfuls of the biscuit dough on top.
  5. Close the lid again, set the valve to sealing, and cook on high pressure for an additional 5 minutes.
  6. Once cooking is complete, perform a quick release. Serve hot.

Notes

  • This recipe can be easily adjusted by adding more vegetables or spices to taste.
  • If you prefer a thicker broth, you can thicken it with a cornstarch slurry after pressure cooking.
