A comforting and quick version of chicken and dumplings made in your Instant Pot.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup frozen peas and carrots
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups biscuit dough (store-bought or homemade)
Instructions
- Press the sauté button on the Instant Pot and add the chicken, broth, garlic powder, onion powder, salt, and pepper.
- Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
- Quick release the pressure and shred the chicken inside the pot.
- Add the frozen peas and carrots, then drop spoonfuls of the biscuit dough on top.
- Close the lid again, set the valve to sealing, and cook on high pressure for an additional 5 minutes.
- Once cooking is complete, perform a quick release. Serve hot.
Notes
- This recipe can be easily adjusted by adding more vegetables or spices to taste.
- If you prefer a thicker broth, you can thicken it with a cornstarch slurry after pressure cooking.
