A delicious and filling egg bake made with sausage, spinach, and mushrooms, perfect for breakfast or brunch.

- 1 pound sausage, casing removed
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 8 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the sausage until browned. Drain excess fat.
- Add spinach and mushrooms to the skillet and cook until wilted.
- In a large bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Add the sausage mixture to the egg mixture and stir to combine.
- Pour the mixture into a greased baking dish and sprinkle with cheese.
- Bake for 30-35 minutes or until the eggs are set and the top is golden.
- Let cool for a few minutes before slicing and serving.
