Description

Deliciously moist muffins bursting with pineapple flavor, perfect for breakfast or a sweet treat!


Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugars, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the oil, egg, vanilla extract, and drained pineapple.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Try adding shredded coconut for extra flavor!
