Ingredients

- 1 cup crushed pineapple, drained
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugars, baking powder, baking soda, and salt.
- In another bowl, whisk together the oil, egg, vanilla extract, and drained pineapple.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
- Try adding shredded coconut for extra flavor!
- Store in an airtight container to keep them fresh.
