- 1 pound ground turkey
- 2 medium zucchinis, sliced
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.
- Add ground turkey to the skillet and cook until browned.
- Stir in the zucchini, tomatoes, Italian seasoning, salt, and pepper. Cook until zucchini is tender.
- Transfer the mixture to a baking dish, top with mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- This casserole can be made ahead of time and stored in the refrigerator.
- Feel free to add other vegetables like bell peppers or spinach.
- Leftovers can be stored in an airtight container for up to 3 days.
