Deliciously spiced ginger cookies that are perfectly crisp on the outside and chewy on the inside.
Ingredients

- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and molasses.
- Gradually blend in the dry ingredients.
- Shape dough into balls and roll in sugar.
- Place on ungreased cookie sheets and flatten slightly.
- Bake for 8-10 minutes or until crisp.
- Allow to cool on wire racks.
Notes
- For softer cookies, reduce baking time by a minute.
- Store in an airtight container to keep them fresh.
