- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 4 ounces cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, beat the butter and brown sugar until light and fluffy.
- Add the egg, molasses, and vanilla to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Drop tablespoons of dough onto prepared baking sheets and bake for 10-12 minutes.
- Allow the cookies to cool completely before frosting.
- For the frosting, beat together cream cheese and powdered sugar until smooth.
- Spread frosting on the flat side of one whoopie pie and sandwich with another pie.
Notes

- For added flavor, consider adding a touch of orange zest to the frosting.
