Description
Soft and chewy ginger molasses cookies made with warm spices and molasses.
Ingredients

- 2 1/4 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1 large egg
- 1/4 cup granulated sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
- In another bowl, beat together butter and brown sugar until fluffy.
- Add molasses and egg, and mix until combined.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Form dough into balls and roll in granulated sugar.
- Place on baking sheets and bake for 8-10 minutes.
- Cool on wire racks.
Notes
- For chewier cookies, do not overbake.
- Store in an airtight container for up to a week.
