Description

Galgal Ka Achar is a tangy and flavorful Indian pickle made from round raw mangoes, often enjoyed with various dishes.


Ingredients

  • 500 grams round raw mangoes
  • 100 grams salt
  • 50 grams mustard seeds
  • 30 grams fenugreek seeds
  • 25 grams turmeric powder
  • 50 grams red chili powder
  • 200 ml mustard oil


Instructions

  1. Wash the round mangoes thoroughly and allow them to dry completely.
  2. Cut the mangoes into quarters and sprinkle salt over them.
  3. Mix the mustard seeds, fenugreek seeds, turmeric powder, and red chili powder in a bowl.
  4. Combine the spice mix with the salted mangoes and mix well.
  5. Pack the mixture tightly in a sterilized jar and pour mustard oil over it.
  6. Seal the jar and let it sit in sunlight for a week, shaking it every day.
  7. After a week, the pickle is ready to serve.

Notes

  • For best flavor, allow the pickle to mature for at least a month before consuming.
  • Always use clean and dry utensils to take out the pickle to avoid spoilage.
