Description

Delicious and nutritious homemade fruit and nut bars inspired by Larabars, made with wholesome ingredients.


Ingredients

Scale
  • 1 cup dates, pitted
  • 1 cup almonds
  • 1/2 cup cashews
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. In a food processor, blend the dates until they form a paste.
  2. Add the almonds, cashews, shredded coconut, peanut butter, vanilla extract, and salt. Blend until combined and mixture is sticky.
  3. Line an 8×8 inch pan with parchment paper.
  4. Press the mixture into the pan evenly.
  5. Refrigerate for at least 1 hour before cutting into bars.
  6. Store in an airtight container in the refrigerator.

Notes

  • Feel free to substitute different nuts or add chocolate chips for variety.
  • These bars can be stored in the fridge for up to a week.
