Description

A delightful chocolate roll cake filled with luscious cherry filling and whipped cream, all topped with chocolate shavings.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup cherry pie filling
  • 1/2 cup chocolate shavings


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a jelly roll pan and line it with parchment paper.
  2. In a bowl, combine flour, sugar, cocoa powder, baking powder, and salt.
  3. Add eggs, oil, and vanilla and mix until smooth.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 12-15 minutes or until a toothpick comes out clean.
  6. Remove from oven and let cool for a few minutes.
  7. Invert onto a clean kitchen towel dusted with powdered sugar.
  8. Spread cherry pie filling over the cake.
  9. Roll the cake tightly in the towel and let cool completely.
  10. Whip heavy cream with sugar until stiff peaks form.
  11. Unroll the cake, spread the whipped cream, and roll it up again.
  12. Decorate with additional whipped cream and chocolate shavings before serving.

Notes

  • For best results, chill the cake roll in the fridge for at least an hour before slicing.
  • You can substitute the cherry filling with raspberry for a different flavor.
