Description

A hearty dish of eggs poached in a spicy tomato sauce, perfect for breakfast or brunch.


Ingredients

  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/4 cup fresh basil, chopped


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and red pepper flakes, cooking for another minute.
  3. Stir in crushed tomatoes, salt, pepper, and oregano; simmer for 10 minutes.
  4. Create small wells in the sauce and crack an egg into each well.
  5. Cover and cook until eggs are set to your liking, about 5-7 minutes.
  6. Sprinkle with fresh basil before serving.

Notes

  • Serve with crusty bread for dipping.
  • Adjust the spice level by adding more or less red pepper flakes.
