Description

This creamy and delicious rice pudding is a delightful dessert that’s easy to make at home.


Ingredients

  • 1 cup arborio rice
  • 4 cups whole milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 2 large eggs
  • 1/2 cup raisins (optional)


Instructions

  1. In a large saucepan, combine the rice, milk, sugar, cinnamon, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture is thickened.
  3. In a separate bowl, whisk the eggs. Gradually add a ladle of the hot rice mixture to the eggs while whisking to temper them.
  4. Stir the egg mixture back into the rice pudding and cook for an additional 5 minutes.
  5. Remove from heat and stir in the vanilla extract and raisins, if using. Let it cool before serving.

Notes

  • This pudding can be served warm or chilled.
  • For added flavor, consider using almond extract instead of vanilla.
