This creamy and delicious rice pudding is a delightful dessert that’s easy to make at home.

- 1 cup arborio rice
- 4 cups whole milk
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 pinch salt
- 2 large eggs
- 1/2 cup raisins (optional)
Instructions
- In a large saucepan, combine the rice, milk, sugar, cinnamon, and salt. Bring to a boil over medium heat.
- Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture is thickened.
- In a separate bowl, whisk the eggs. Gradually add a ladle of the hot rice mixture to the eggs while whisking to temper them.
- Stir the egg mixture back into the rice pudding and cook for an additional 5 minutes.
- Remove from heat and stir in the vanilla extract and raisins, if using. Let it cool before serving.
Notes
- This pudding can be served warm or chilled.
- For added flavor, consider using almond extract instead of vanilla.
